Breakfast Burritos!

Hi guys! Being a veggie (that is myself I am!) I really am iffy on breakfast burritos. Not because they contain egg (well yes to that too because I can’t eat eggs, they make me sick!), but because they tend to be loaded with bacon and sausage and cheese, and potentially losing all the goodness a burrito can have!

So I made my own.

Here are my ingredients, some garlic, tortillas, green onion, brown rice, tofu, mushrooms and salsa.

I chopped the green onion, garlic, and mushroom into small bite sized pieces, and threw them into the pan with a bit of canola oil, letting them cook for a bit before adding in my rice. 

Crumble! Yes, use your fingers! Crumble the tofu in after the veggies and rice have had time to cook, and mix everything in.

Season however you like! Personally after living seven years in Texas, I’ve grown fond of spicy in the morning, it’s a great way to wake you up and fill ya up as well! I used red pepper, celery salt, and some random bit of sage I found in our spice cabinet. Stir constantly as the tofu will want to stick to the pan (I used half a block of extra firm tofu). Cook for about five minutes, then pour into flour tortillas, add salsa and enjoy!

Some alternatives to this recipe follow:

Smear avacado onto the tortillas

Add a light layer of cheese

Egg whites instead of Tofu

Add onion

The possibilities are endless!
